During thermal food processing and roasting of high quality cocoa beans a more aromatic flavor and smell of the resulting chocolate, cocoa or cacao product is produced when the natural sugars are dissipated, namely, glucose and fructose. These heightened improvements in sensual olifactory pleasures (smells) and gustatory systems (taste) are a result of the chemical changes that occur during slow roasting, as a consequence there is a decrease in soluble tannins which alters the chemical composition of the product. Proper roasting of the cocoa bean is what renders the end product to become a tasty delectable. [1] [5]
Science is only beginning to understand the role that PEA could possibly play in mood recovery and cognition but the early findings are promising. Mental and cognitive functions as a result of taking PEA are not endorsed by the FDA or AMA.
Higher amounts of phenylacetic acid were found in the urine post-vigorous exercise, than before exercise. This suggests the possible correlation between exercise and uplifted moods (the runner's high, so to speak) [7].
ß-phenylethylamine (PEA) is often added to meat as an anti-microbial activator. Lab tests show that the addition of PEA to infected meat pieces reduced the contamination from E. coli bacteria count on the beef pieces by approximately 90% after incubation of the PEA treated the E. coli contaminated meat pieces at 10°C for one week. As with most dietary supplements there is not enough evidence to categorize any of the findings from these research links as definitive proof that the supplement ß-phenylethylamine (PEA) HC provides any mental or physical health benefits. Most of the findings are anecdotal. This doesn't negate the accuracy of the research either. More research needs to be done.
